- 6 medium Sweet Potatoes
- 1/2 cup Orange Juice
- 4 tbsp Butter
- 3/4 tsp Salt
- 1-8oz can Crushed Pineapple, drained
How To Prepare
- Bake sweet potatoes at 375 degrees for 1 hour or until tender.
- Cut a 1-inch strip from the side of each sweet potato. Carefully scoop 1/2 of the pulp from in shell.
- Combine sweet potato pulp, orange juice, butter and salt
- Beat until fluffy
- Stir in pineapple
- Stuff shells with sweet potato mixture
- Bake at 375 degrees for 10-15 minutes
