Sweets for My Sweetie

Remember all those parfait glasses I purchased at the thrift shop? Well, I found another great use for them! Today I was making Chocolate Dipped Strawberries for a client and I made an extra dozen for my family. Since my honey works so hard to provide for us I decided to surprise him with a delivery at work.
I used one of the large glasses and filled it with 6 huge strawberries, wrapped it with a little cellophane and tied a red ribbon to the top. We all wrote him a love note and delivered it to his office. We snuck in and left it at the reception's desk so he did not see us. It made our day making it for him and it made his day getting a little pick me up during a long day. He was excited because without knowing I made just enough for him to share with everyone on his team. This week we are going to surprise my niece at school with a little treat to give her a pick me up. What about you? Who needs a little pick me up in your life?

WD-40


The door on our van was making a grinding noise every time we opened it. It was one of those noises that drove me nuts so I was thrilled to find a coupon for some good WD-40! Today the van door rolls closed quietly and no more grinding sound! Yeah!!! More Lemonade

Well, today was another one of those days where I had to make more "lemonade" like I did last week. As you have previously read it was our son's 9th birthday and I had great plans of making him a birthday cake. Well, I put the cake in the oven the same time as a roast and guess what? Yep, I forgot about the cake! As you can see below it was well done! Not burnt, just very well done!

When I pulled it out of the oven, I was at first aggravated with myself but then I had to laugh and ask, "Rachel, are you going to make lemonade or suck on the sour lemon?" So, I decided to make lemonade. And let me just say, it was some good lemonade too!
I knew I had cool-whip and jello to save the day so I put that on the back burner and the next morning ran to the local thrift shop to find some larger parfait glasses, well really wine glasses, but for this dessert they are parfait glasses.
Boy was I happy to find them for just .25 cents each at the Goodwill Outlet Center. I purchased 12 of them so I can make dessert at Easter with our family. They needed a good cleaning because they had the film that often gets on glass dishes.
Sitting next to my sink (of course in a pink dish) is the perfect
cleaning product to get that film off!

A few years ago my sister told me about Borax and how many things you can do with this amazing product! If you put a teaspoon in your dishwater or dishwasher your dishes will sparkle. Even that well done cake just wiped out of the pan when I let it soak for about 5 minutes. I love this stuff!!! To clean the glasses I filled the dishpan with with hot water, add about 1/4 cup Borax and let the glasses soak for about 15 minutes and they came out sparkling clean ready for a yummy dessert!

Now back to our dessert, I simply cut the middle of the cake into chunks and put 3-4 chunks in each glass. Then while the cook and serve pudding is still hot I poured it over the cake

One large box filled 5 parfait glasses.
Cover and place in the refrigerator till set and cool.
After cool, top with your favorite topping, for us it was cool-whip and pecans!

As you can see it was delicious!

and now he is 9

I can't believe he is 9! Time goes by so fast and when I ponder upon his life I remember the exact moment I heard the nurse say, "Congratulations your expecting!" After waiting 6 years I did not believe the two pregnancy test I had taken, so when the nurse told me tears welled up in my eyes and at that moment I fell in love with this little one. The day we delivered him was a day like no other. Bringing our second child into the world held a special surprise, he was born in a special sack and the doctor informed me that it was very rare to see a child born like this. I remember our student nurse standing in the corner crying and thanking me for allowing her to experience her first birth. He is a precious little boy and we are thrilled that 9 years ago God chose to give him to us. We are thankful for God's protection upon him when he suffered two head injuries and severe skull fracture. He is full of life and brings countless hours of joy into our home. He is...

Making Lemonade

I just love the saying; "When life gives you lemons, make lemonade!" I must admit, I don't always feel like making lemonade though. Today was another one of those days where I had to decide, am I going to trust God and make some good lemonade or am I going to crumble under the weight of disappointment. Mark was offered a great job this week, then at the last minute, they decided to not go through with the deal and keep things like they have been running. When he called to tell me I could hear the disappointment in his voice. Like most, we were very disappointed, but then we quickly decided together to make lemonade and continue to trust Him. The past 8 months have been tough, but our life is in His hands and whatever He decides is fine with us. I've had a portion of a song in my head all day and all I could only remember part of a verse but it was enough

My life is in your hands
And though I may not see clearly
I will life my voice and sing
Cause your love does amazing thing
Lord, I know, my life is in your hands

After spending a few minutes together on the phone we hung up and began to look forward to the next blessing. Sometimes the next blessing is just the thing to pull you through the day and the Lord knew we needed one today....Sometimes when you're down the best thing to do, is do something for someone else, so we went to Goodwill to take my Mom a meal. The boys were excited to shop so I went to the clothes to look for Mark something "new". Its was as though the Lord gave us a little glimpse of what is in store for Mark because a business man donated clothes just Marks size. I was able to get him 8 dress shirts from JCPenny and Belk, 2 beautiful suit jackets and a new grey suit all fresh from the cleaners!!! When I went to pay the total was $57 but then I remembered about a card I had with points, and that took my total down to just $38!!!! Was I ever excited! The cashier said, "You have 5 days to return these if they don't fit!" I told her, "These were put here just for my Honey and I am sure they are going to fit just fine, but thank you." I was like a kid in a candy shop and could not wait for Mark to get home. When he got home he was beyond excited and guess what....they fit like they were made just for him!!! We both laughed and rejoiced at how good God is! We don't know what the plan is and to us the glass is dark but to our Lord its crystal clear. Today, we are again resting in His arms and trusting that He knows what the next step will be. I like to think he reached down and gave us a little kiss today and said, "Just trust me!" So that is exactly what we're doing....just trusting and enjoying some good lemonade along the way.

My Coupon Binder

This is an older post but I have had a several people ask me about the binder this week so I am re-posting to show those asking how to fill your binder. Please feel free to leave a comment if you have any questions. Hope this helps!

When I first started to use coupons I kept them in a envelope labeled for each department. I soon got tired of standing in the dairy department looking through 30+ coupons for a particular yogurt coupon or for a coupon for butter. I soon realized the envelopes had to go so I started looking for ideas from others who coupon and came across the coupon binder. I converted my coupons into the binder and I LOVE IT! It saves me so much time and money because everything is right at my finger tip! It did take some time to put all the coupons in the binder but that was my own fault because I collected a few months of coupons before getting organized with the binder. Now that I have it, I just put my weekly coupons in and pull the old ones out. I only coupon about 3-4 hours a week (including shopping, filing and clipping coupons) but it saves me hundreds a month so its worth my time. I mentioned to my honey that I wanted to start a binder and he came home with this cute pink binder and it made my day!

In my binder I keep a few items. I keep the zipper pocket with pens, a calculater (missing its in my purse) and sissors, On the left side of the binder I keep Rain Checks, a file folder with sale adds for the week, and in the pink pocket I keep coupons I want to make sure and use that week.
Since we have boys in our house its nice to have something pink!

I purchased baseball card holders and they work fantastic to hold all my coupons! I divide the pages by department. In my binder I have Baking Supplies, Beauty, Breakfast, Can Goods, Cleaning Supplies, Dairy, Drinks, Frozen, Pet, Produce, Meat, Medication, Snacks, Other.
Make up a list that is convenient for you and fits your style, there is no right or wrong way.
If it works for you then its the right way!

In the back of my binder I keep a section for other coupons such as
craft store coupons, drug store, toy coupons etc.

The Greatest of These

When Mark and I were engaged back in the summer of 1994 we were overwhelmed with the negative comments people would make to us regarding marriage. They were joking of course; however, it would always shock us. We've all heard them.."Oh, your going to be tied to a ole ball and chain." "Enjoy your single life, its all down hill after you say I do." It had such an impact on us that during one of our dates he mentioned to me how many people say these negative comments about marriage and I mentioned to him how is was surprising to me too. We made a pact between the two of us that we would not say those things when we met friends who were getting married, but be uplifting at this precious gift from God. Even as a young couple we knew that marriage was a gift from God and one that we wanted to cherish.

We knew we wanted him to be a part of our wedding as well as our marriage. I once heard that inviting God into your marriage is like a little girl braiding her hair. When trying to learn, you start with two strands and twist and turn but the braid always falls out. Once you learn to add the third strand and secure it, the braid becomes tight, full of strength that can weather any storm.

When you invite Christ into your marriage he is the strength between you and your husband. Is it always easy? No. Do patience run low and misunderstandings cause pain? Yes. Dose it still take work? Yes, Daily. But I know the Lord is there to draw that strand a little tighter knitting our hearts tighter one to another if we just seek Him.

Things will change in marriage and often the glass is dark and we can't see God's plan. I am so thankful that 16 years ago we invited Christ into our marriage because since Mark was laid off 8 months ago, we have been on a new journey in our lives. Having Him as the third strand in our marriage has strengthened the love we have not only for one another but for Christ as well. Today we are resting in faith, hope, charity as we await the unveiling of God's next plan for our lives. Its a comfort to know the greatest of these is charity and we feel His love and rest assured that He is in control.
